Jumbo Raisin Cookies
My mom used to make these cookies all the time. We would always take a huge batch with us when we went on our annual three week summer camping trip. I can even remember the container they were stored in inside our camper. It's been a crazy week, we have company coming over today and I felt like a "comfort" treat so I made a batch of these first thing this morning. I haven't made them in years and they still taste as delicious as I remember them. Thought I would share the recipe here in case you would like to try them too.
2 cups raisins
1 cup water
Put raisins and water in a pot and boil for 5 minutes. Cool.
1 cup shortening (this is what the recipe calls for but I used butter)
2 cups sugar
3 eggs
1 teaspoon vanilla extract
Cream these four ingredients until smooth. Then stir in cooled raisins ('juice' and all)
Add the following:
4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoon salt
1 1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 tsp allspice
Stir until mixed.
Drop by spoonful onto cookie sheets.
Bake at 375 for 12-15 minutes. Enjoy!!

I used to love raisins when I was a kid. I don't remember when it happened, but at some point the tide turned and now I can't stand them. Raisins are like my personal kryptonite. Bleh!
But, strangely, you substitute raisins with dried cranberries? And I'm fine. Go figure.
The cookies look delicious! I love raisins! :) Yum!

We put in chopped nuts and doubled up on the spices, like like mom used to...
I just made this recipe, except I subbed chopped dates for the raisins, whole wheat flour for half of the all-purpose, and margarine for shortening. Turned out delicious!
I think these are the best cookies I have ever made! I doubled the recipe and now have way to many! I'll be delivering these to friends this afternoon :)
My all-time favorite cookie growing up as a child. My mom would make them and those would be the first cookie I’d go for and now I bake them and it is still the first cookie I go for.
Is butter better than shortening ??
