I also decided to make some apricot jam (using Pomona's Pectin - 8 cups apricots to a little less than 2 cups sugar) with some of the very ripe ones to use as a spread in our crepes and to give some as gifts. I love having extra preserves on hand to give to people who would enjoy them.
Then we were offered even more apricots so I dug out my solar dryer and put it to use for the first time this season.
All that goodness and we still have the tree on this property (a later not as flavourful variety) to harvest. Yum!
That looks so good. Lucky you, to have so many apricots! We've tried planted apricots trees in the past, but they just didn't survive.
ReplyDeleteAll that apricot goodness! Thanks for the link for the recipe. I'll have to give it a try. I have a box of that Pectin on my shelf. Is there more to your canning recipe? Just 8 lbs of apricots, <2 cups sugar and a box of this pectin? Sounds too easy. Any tips on how to look for ripe apricots that are tasty. So many I've tried are lackluster in taste.

ReplyDeleteall absolutely gorgeous stuff. I recently made apricot butter (like apple butter but with apricots :) ) sweetened only with honey and maple syrup, and it turned out great. Im going to try to get the recipe up on my blog when I can, and I'll send you the link when I do. Thanks for sharing!
ReplyDeleteEllen there was a bit of lemon juice in the recipe too. I just followed the instructions inside the box of Pomona's and used about 2 cups of sugar ( a little less) to 8 cups of apricots so that is a double recipe compared to what they give instructions for. One other thing I like about Pomona's it that you can easily double, triple (or more!) the recipe and it still always sets up well.
