Not the floaty kind of boat...the eating kind of boat. I scooped a bit of the flesh (just the seedy part) out of a large zucchini and then made a filling for it. I sauteed some onion and garlic with some grated zucchini then I added some breadcrumbs and feta cheese. W wanted me to add cream cheese and E's idea was to add some Frank's Red Hot sauce, then I added some chopped tomato. I put in some salt and pepper and used this mixture to top the zucchinis.
I baked them until the zucchini was cooked through and...edible zucchini boats.
We haven't only been eating zucchini though, there's been fresh tomatoes (this is E's first ripe one from his larger tomato plant this year),
there are some very looooong beans ready,
And a whole lot of cukes - Armenian cukes, long english cukes, Marketmore cukes, lemon cukes and more.
Anyone have any favourite cucumber recipes they want to share??
And I picked some peaches on my way home from working the other day so that this morning I can get started on making our yearly supply of peach butter - so good on our weekend morning waffles.
And, since we are heading to the beach with friends again today, I think I might take along this fellah
and see if the kids can make an actual boat out of him. I'm sure a hollowed out zucchini could make a fun toy boat. ;-)
For some reason my armenian cukes did not germinate after 4 plantings I gave up. What do they taste like. I have been wanting to know and sad over having any.

ReplyDeleteMmmm, we have a recipe for zucchini boats (and tomato barges) from a Moosewood cookbook...similar but some cream cheese and artichoke hearts, and I think I add jack cheese grated. I plan to make these after we pick up some zukes at the farmers market theis afternoon! We love 'em and they are easy!

Great! I'm going to make some dairy free variation of this "boat" for dinner tomorrow...I have a zuke as big as my arm waiting to be devoured!

ReplyDeleteHi Jane - I really love the Armenian cukes, I find the taste is not unlike regular cucumbers but what I like is that the skin never seems to get tough and stays very thin so you never have to peel them. Also no matter how big I've let them grow (I sometimes miss one and don't find it until it is huge) they are never bitter.

Hey, I feel your pain on the cucumber front. We have been making a lot of cucumber agua fresca. Great for these hot summer days...
