Zucchini Soup

 Heidi shared her recipe for a delicious and simple zucchini soup in the comment section here.  I made it with one good sized zuke and found it so delicious that I made a second batch.
I wanted to share her recipe here for everyone to see just in case others have a surplus of zucchini as well.  Thanks so much, Heidi. 

Zucchini Soup (1 Batch)


  
500g(1lb) zucchini
1 onion
dab of butter
700ml(1.5pts) vegetable stock

 
1) Wash, top & tail zucchini. Cut into rounds (slices)
2) Dice onion & saute in butter
3) Add zucchini & stir for about 5 min
4) Add stock & simmer for about 30min
5) Season to taste
6) Liquidise

 PS This soup freezes well; also tastes great when cold; if you like thikc soup, just add less water/stock.
I used garlic in these batches I made because I'm sharing it with a friend who is not supposed to eat onions right now but I'll be making my next batch just as the recipe says.  I served it with a good squirt of Bragg's Aminos too because we all love the flavour that gives to soups.

  1. I have been meaning to post this zucchini recipe. In the zucchini season we have this cake for treats at our community garden lunch.
    Zucchini Chocolate Cake
    3 cups grated zucchini
    125gm butter
    1/2 c sugar
    250gm dark chocolate
    1 tsp vanilla essence
    4 eggs lightly beated
    2 cups flour
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    Preheat oven to 180 oc . Grate zucchini and set aside. Put butter, chocolate and sugar in a pot on low heat until chocolate has melted. Remove from the heat and add vanilla and eggs and mix gently. Add flour, raising agents and salt and mix until combined. Fold in grated zucchini. Line 2 loaf tins with baking paper and pour mixture in. Bake for 40minutes

  2. When I read "Zucchini Soup" I thought...yuck. It just sounded bland. But then I read on...and I can imagine it being yummy!
    Our favourite and totally not-healthy way to eat zucchini is the way my parents did it when I was a kid: dredge slices in flour, dip in egg, then in bread crumbs, and fry in butter. Ooh, fried zucchini...delish!

  3. I also thought zucchini soup sounded strange, but it looks delish and super simple. I'll have to give it a try! Have you ever ate the zucchini flowers? You can stuff them with a piece of mozzarella (not grated), dip them in batter and lightly fry them. Not super healthy, but it definately wows people because it's different and looks pretty :)
